During the Christmas holiday I prepared them some drinks prior to their bedtime. Among all, they really like kinderpunsch and matcha latte. Their craving for matcha is so strong that they requested matcha latte almost every other day after dinner 🙂
Matcha powder…..1.5 tsp
Maple syrup…..1 1/4 tbsp
Hot water…..1 tbsp
Full fat milk…..350mL

The little people always have a strong craving for green tea…green tea ice cream, green tea pudding, green tea cupcake…the list goes on and on…
Dordor always asks for green tea donuts. I am a bit reluctant to make the deep fried version as they are not healthy and use up too much cooking oil so I resort to the baked version. It’s not easy to find the mini donut mould in Hong Kong too. It happened I found one in Amazon Japan so I grabbed it immediately without thinking.
This green tea donuts are not really “donuts" per se. They are chewy inside with a crisp crust because of the glutinous rice flour and I guess that’s why they are called Pon de matcha instead of donuts. Dordor and Honhon loved them as their late night snacks! This baked version is adapted from a recipe I saw here.
Matcha powder 1 tbsp
Glutinous rice flour 80g
Cake flour 110g
Vitasoy 125 ml
Baking powder 3/4 tsp
1. Preheat the oven to 180C.
2. Rub the mould with a thin layer of butter.
3. Mix the matcha powder well with the dry ingredients.
4. Whisk the egg with sugar. Add vitasoy and mix well.
5. Sift the dry ingredients into the wet ingredients and mix well.
6. Put into the oven and bake at 180C for 15 mins.
7. Remove from the mould and place the Pon de matcha on the cooling rack. Ready to serve!

It is really a headache preparing morning/afternoon snacks for the two fuzzy little people…there are only a few things that they are interested, e.g. steamed thread rolls ( ), eggy bread, chocolate cake and dumplings…
And this is definitely one of the favorite snacks of my younger boy…he can finish two cakes in a day! Seeing him munching the cakes happily really makes my day!

I have not written any new blog post for quite some time. And here’s why: we found out we were expecting our second baby. Our previous helper left then new helpers joined and I was seriously sick right before delivery…
That said…I am back! As a mother of two now, it is my humble wish that the two boys are living healthily and happily everyday…
It’s been real hectic in the past months juggling work and family…searching for helper (one of our helpers are leaving us due to family reason), applying for schools, preparing annual budget…and what’s more…the 2 boys fell sick…
Dordor has caught bronchitis and chest infection and Honhon inevitably contracted from him and had his first ever fever since birth (he is almost 9 months now!). Honhon even vomited a few times that both my helpers and I were so worried that we could not sleep through the night and kept checking his temperature.
Am really grateful for the help of my helper…I can really feel their altruistic love over my sons…
And now it’s my turn…I fall sick with stuffy nose and my voice is horrible…but that is OK because when I look back, the sickness was actually a blessing in disguise which brought me closer to my 2 sons!
Honhon used to refuse my cuddles and hugs because he is so attached to aunties…and after a week of intensive home care I am able to put him to sleep and feed him now…
What a blessing!
So this morning I couldn’t help but thank God for all His provisions.
